fermentation, starter culture development, food safety and quality
assurance. Principle responsible party will be Prof. in Global Food
Microbiology Lene Jespersen who has been Coordinator/Deputy on
research projects in West Africa for the last 17 years. Lene will
be responsible for research work and coordination of the project
and will supervise the West African PhD students during their stays
in Denmark. Prof. Emeritus Mogens Jakobsenhas more than 25 years of
experience working in developing countries and will cover the
quality assurance aspect.
