WP1 Value Chain Analyses and Contextual Framing
Gaining an understanding of local cultures, traditions and
habits regarding fermented foods is essential to creating the best
results for the project. By looking at all aspects of the value
chain "from farm to fork" this work packages aims to identify the
areas with most potential for improvement and thus most impact in
terms of value creation, optimization of the value chain, and green
growth.
The work package uses a combination of different theoretical
approaches to investigating value chains whilst always keeping the
end consumer in focus. This new approach will map value chains from
a multidisciplinary context.
Tasks in this work package are:
- Task 1.1 Identification and analysis of value chains
- Task 1.2 Contextual framing of the project
- Task 1.3 Consumer acceptance of multifunctional starter
cultures
