WP4 Implementation of Starter Cultures at SMEs
To ensure the safety and quality, including the multifunctional
characteristics of the cultures, a Quality Management System (QMS)
for implementing starter cultures at the SME level will be
developed. This will include specific procedures for production,
packaging and distribution of starter cultures of lactic acid
bacteria, Bacillus spp. and yeasts to SMEs. Training and assistance
will be offered to the SMEs in the form of local workshops,
seminars and courses. Consumer preferences will be evaluated by
sensory analyses by trained taste panels.
